Sambar Powder

Ingredients:

  • 1 cup coriander seeds
  • ½ cup chana dal (split chickpeas)
  • ¼ cup urad dal (split and dehusked black gram lentils)
  • ⅓ cup cumin seeds
  • 2 cloves
  • ½ inch cinnamon stick
  • 2 tablespoons black peppercorns
  • ½ teaspoon fenugreek seeds
  • 5 or 5 dry red chilis
  • 10-15 curry leaves
  • 1 teaspoon dry coconut flakes

Directions

  1. Heat a little bit of oil in a saucepan over medium high heat
  2. Once oil is hot enough, roast all the ingredients
  3. Once the spices are fragrant, take off the heat and grind into a fine powder
